From a cool-sited vineyard on the slopes above Azé. The vineyard is south-westerly facing, and with a forest at the top of the slope, the vines are shaded until mid-morning. Combined with late and high hedging, the vines have lower sunlight hours, which help keep alcohols in check and acidity in balance at maturity. The soils are a white limestone marl, classic Chardonnay soil, and the vines are sustainably farmed with no herbicides, pesticides nor insecticides. v in i f icat ion Picked and then macerated with skins for several hours, before a three hour press cycle with no turning of the press until late in the cycle, and without use of SO2 nor enzymes. The juice is deliberately oxidised and settled for 24 hours before being racked with the fine solids from the pressing to a mix of new (~15%) and old large format barrels (300L-600L).
