Chaumes Des Perrieres from Raymond Dupont-Fahn

The Domaine Dupont-Fahn is located in Tailly in the commune of Meursault, in Burgundy and was created in 1975. At that time, the grandfather of Raymond Dupont-Fahn believed that his land, straddling Les Perrières de Meursault and Sous le dos d’Anes, was too rocky and lacked soil. The INAO accepted that 20 cm of topsoil is deposited on the soil. A few years later, following a complaint from neighboring producers, the plot was downgraded for the same reason in Bourgogne Blanc appellation. Almost forty years later, the vines are deeply and perfectly rooted in their original terroir and produce high-quality wines. This history, undoubtedly unique in Burgundy, attracts curious and buyers, and it is now very difficult to obtain these wines. Raymond Dupont-Fahn embodies the third generation of winemakers in this vineyard, which is worked without pesticides.

Chaume des Perrières is made from Chardonnay grown on 1er Cru Perrières in Meursault, and its average age is 40 years. Located 50 meters in the Perrières vineyard, just above the Coche-Dury vineyards, the vines have very deep roots. The harvest is manual, then the grapes are put in direct pressing for two hours and the vinification is carried out in stainless steel tanks for 4 months. The wine is then aged on the lees in barrels for 12 months (40% new oak, 60% barrels of 1-2 years).
